I don't think you have to worry about that though. If any starter is Fighting type this generation it will most likely be Froakie.

Evos and pre-evos are not bad at all. Some Pokémon wuold benefit greatly from getting evos, and well, pre-evos are (almost always) cute Pokémon that are loveable. I hope that some are introduced, but just some, I wouldn't like half of the dex being pre/evos of older Pokémon.

They will change if Fennekin's evo ends up as Fire/Fighting. It is unlikely that that will happen (and I don't think it will), but in the remote case that it happens many people are gonna be really pissed.

Yeah. I do see it getting Spikes due to it being based on a hedgehog. If it ends up as Grass/Steel, Fennekin as a Fire/Psychic and Froakie as Water/Fighting by the time of their final evos the starters would actually be somewhat balanced.

I still think of Chespin as being focused on defense more than attack, so I don't picture it as a Grass/Fighting or Grass/Dark. I think he might end up being Grass/Steel by the time of its final evolution, with the green thing on its head, back and tail becoming a spiked armor.

I see this gen as being similar to either gen 3 or gen 4. It is possible that one starter remains single typed, but there is also a big chance that all become dual types upon reaching their final evolution. For those who don't know what Journey to the West is and how it relates to Pokémon here...
