I don't know how many times Ash fought against an Umbreon but I can tell you that according to a file I keep the only Eeveelutions he defeated are Jolteon(two times), Espeon and Sylveon.

If you look at Red's team from the games, Ash caught all of them in the original series, even though his Squirtle and Bulbasaur didn't evolve.
