Bringing my old Pokemon forward and breeding stronger children from them

So I've been absent from Pokemon ever since X and Y, and finally jumped back in with the remake of Diamond and Pearl. I know that Pokemon Home doesn't yet work with BDSP, but to prepare for it I'm thinking I want to take some time to breed some of the older pokemon I've kept on since the original gen 3.

I understand what goes into breeding for IVs and training for EVs, but I wanted to know what version would be easiest to do these things on. I remember XY had a training module that let you directly train EVs, and I'm wondering if a similar function exists in the generations I haven't played up till now. I currently have all the Pokemon I'd like to breed and move forward on my AS and Y versions on my 3ds. I have SP for the current gen. What version should I breed them on and what version should I EV train on? At what point should I pull them forward from my old versions?

X/Y and OR/AS made breeding and EV training the fastest and easiest in my opinion. The Egg Hatching O-Power dramatically speeds up hatching eggs, making the overall IV breeding process much quicker, and defeating horde battles with spread damage moves allows for very quick EV training.

SM/USUM are also good with hatching Pokémon using the Poképego Hot Springs. I always put in 18 Eggs to hatch in the Springs and it’s a great way to save time from trying to hatch eggs by walking around and also easier to see if you got what you wanted to get.

I like what @Captain Jigglypuff said about using SM to do the breeding. When it comes to EV training I find SwSh to be the easiest since as of the current generation you can max out stats with vitamins. And with money being easy to acquire in these games it’s super easy to get through EV training 10 Pokémon in just minutes.
