Espeon because she already has a fire type and a water type. Pikachu is the only electric type they'll allow on the team and I'm hoping for Corphish to evolve and become a Dark type.

Let me try to think logically here:
Jolteon = The writers would never allow another electric type to steal the precious spotlight from Pikachu. This is why none of the main characters have ever caught an Electric type during the 400+ episodes of the show.
Vaporeon = Since she has a Squirtle, I don't think the writers will want her to have two Water types for the time being.
Flareon = It's a possibility, but again, Combusken.
Umbreon = Could happen, but Umbreon is a trademark Pokemon of Gary. Then again, I suppose having Pokemon that other people had is now something the writers love doing (May having "Ash" Pokemon, Bulbasaur, Squirtle, Munchlax, and James having Manene a pre-evolution of Delia's Mr. Mime...)
Espeon = Probably the most likely case, as May seemed to like Vivian's Espeon. But it kind of conflicts with Sakura's Espeon, who I dearly love. I guess the writers don't care about giving a character the same Pokemon as a major recurring character anymore though.
Staying as an Eevee = I could see this happening too, it may not evolve until the D/P region even.
So uh, my bets on Espeon for the reasons above.

C'mon. It's bad enough that it became an Eevee in the first place! I don't want it to evolve, I want May to trade it in for the Zigzagoon that egg was SUPPOSED TO HATCH INTO!

I don't care about evolution. I hope, her Eevee won't evolve. Its my favourite pokemon^^
But I will say my opinion....
Eevee won't evolve into Vaporeon and Flareon because May has Combusken and Squirtle. Umbreon doesn't suit her (+Gary has one), Espeon would be nice because is very pretty and May has already seen and loved it. Jolteon....

Keeping it as an Eevee would suck, because it doesn't learn any attacks that are even remotely interesting. The only thing Eevee has going for it is the fact that it has multiple options for evolution, which isn't entirely impressive. But I honestly wouldn't put it past them to keep it in its pre-evolved state, for obvious reasons that I'm getting quite sick of repeating now~
Flareon, Vaporeon and, to a lesser extent, Jolteon wouldn't offer anything particulary interesting in battle. They're all essentially just pawns used to send out Flamethrowers, Thunderbolts and Water Guns, and we've seen all of that before. Far too much.
And Umbreon, despite having an interesting type, doesn't have much going for it. Faint Attack and Bite are pretty lame as far as Dark type moves go.
So I'm rooting for Espeon~

Alright, I've calmed down now, and can now accept the fact that May has an Eevee. In fact, I'm hoping for an Espeon from it.
And furthermore, I've decided to totally abandon my promises to have the Cleffa avatar, the idiotsville location, and the pink text! They were stupid promises that I only made because of my own overconfidence.

There should be a "New D/P Evo" option for the losers like me out there who have a lick of hope for such a thing to happen ;o;
I think it will stay as an Eevee during the Battle Frontier so we can actually see an Eevee battling for more than 2 seconds for once and so it can develop. Then, when the group heads over to D/P, it will evolve into a D/P Evolution some how.
If that plan goes to hell and I'm on crack [99% chance], then Espeon. Pretty much the only *actual* girly Eeveelution. And Psychics are always welcome seeing as no one on the AG team has ever had one.
The only thing that irks me is Espeon has been showcased so much...*thinks of May's Bulbasaur and Squirtle* On second thought, scratch that.
