This applies to all Legendaries/Metagross.

Lets just say I want an Adamant Groudon, or an Adamant Metagross. If I caught a Groudon of the wrong nature, or recieved the a Metagross with the wrong nature, I could just turn off the game (I saved right before battleing/obtaining), continue and catch/obtain the pokemon again, would it have a different nature or would it still be the same ?

yes. you can save immediately before meeting a legendary, and they will have different IVs/nature each time. the chance of being shiny is recalculated, as well, so if you want a black rayquaza, you can reset until you get one.

this applies to all "event" pokemon, such as beldum, eevee from pokemon mansion, lapras from silph co, the starters, castform, etc. it doesn't, however, apply to the wandering lati@s in R/S/E or the legendary hamster in FR/LG.

Can't meta be breeded with ditto, so you can get the right natures, ivs etc?

Yes, Metagross can be breeded with Ditto. I am currently breeding for a Adamant/Shiny Beldum.

Yeah, I do it all the time. I only like certain natures so I'm picky. It's not what I think is best for the pokemon, just what I like in general.

I think that there is a way for you to get an adamant metagross. I think
You can get a female ditto with adamant to breed with metagross. Give the ditto an everstone and I think you have a 50% chance of getting an adamant metagross. That works with every pokemon.
