Dear god I have come to the conclusion that experience share transfers over EV points! I only noticed as I tried to give my pokemon some protein and it wouldn't and also its states went up more then usual sometimes when it leveled up. Also my chikorita didn't beat a single pokemon but was done its EV trainning already !?!?!? How does this work exactly? I am so confused on this. My chikorita with frenzy plant is ruined now :(

Exp. Share transfers the normal EVs given by the defeated Pokémon. This way, both the Pokémon that battled and the one that holds the Exp. Share get the EVs given by the enemy.

And if you have Emerald, Chikorita isn't ruined. :)

The EVs/IVs/DVs discussion thread covers this topic pretty well:

Whenever you defeat a Pokemon, all Pokemon that participated in the battle or held Exp. Share during the battle will get the full EV alotment from that Pokemon. So, even though Spinda only gives 1 point to the Special Attack EV, you can have five Pokemon in your team holding Exp. Share and have the head Pokemon defeat a Spinda to get 6 points from it, one for each of your Pokemon. If you are playing Emerald, and your Chikorita is not yet Level 100, you can use certain Berries to lower the undesired EVs.

Please read the FAQ (linked by Whompithian), it already lists this info and everything else you need to know about EVs. If you have any more related questions, please post in there, as that's the official thread for EV/IV questions/discussion.
