I love love LOVE the music that plays when you're around the three lakes.
Also the battle music for the Galactic commanders.
And the surfing music.
Music for Eterna/Celestial City. I love how it's kind of lazy western cowboy music.
The Mt. Coronet music just bfore Spear Pillar.
And lastly the music when you're in the snowy wilderness.

I haven't got any further than Sunyshore so I don't know what it's like after that.

I'd say the music in the fight with the Tower Tycoon and the music on Route 225.

I've only just caught Palkia, so I've not beat the game yet, but D/P has amazing music.

Jubilife and Route... 212 I think, the one with the rain and Marshes before Pastoria, are two I really like.

The Battle Music was really great if you consider how the 3rd generations music was the same stuff over and over again.
