Favourite Starter: Sceptile (my first mon + Ash has one)

Favourite Legendary: Latias (because of pokemon hero movie)

Favourite mon that's not a starter or legendary: Swellow (cuz it was badass in anime)

Swampert - favourite fully evolved starter Pokemon of all time. Love its typing and "derpy yet powerful" looks.
Absol - looks cool, has a sad backstory, and a good movepool. I've also grown to like its Mega.
Salamence - favourite pseudo-legendary of all time. Like its simple yet cool design, high Speed and attacking stats, although I really dislike the Mega.
Latios - looks cool yet adorable, has a great movepool, high Speed and Special Attack. Never liked the Mega, though.
Kyogre - favourite Legendary of all time. Love its backstory, and Drizzle actually makes sense on it given said backstory, unlike the Creation Trio's Pressure, for example.
Other Generation III Pokemon I really like are: Flygon, Altaria, Milotic, Zangoose, Shiftry, Cradily, Armaldo, Aggron, Shedinja, Latias, and Groudon.

My favorite Pokemon from Gen 3 is Zangoose. He’s unfortunately pretty useless competitively. But his design is so cool.
The sharp claws and the red scar design gives it an edgy look.

Others I love from Gen 3: The other starters, Swellow, the variation of Spindas, Skarmory, Tropius, Absol, Mightyena, Vigoroth (similar to Zangoose, but it’s actually useful), and Manectric.
Plus all the legends are sick!

I always liked Solrock/Lunatone and wished they had stats or a gimmick to back up their design. Like a move that powers up if holding sun/moonstone, or maybe a thematic doubles ability (like plus/minus). It would have made the Tate/Liza fight more interesting too.

Absol and Tropius are two of my favorites. Absol especially, it's in almost all of my in-game teams and Mega Absol is one of my favorites. I thought his appearance in Rescue Team was perfect as well.

Dusclops.

I love the lore and design idea, a ghost cyclops with a black hole inside of its body is such a cool and badass concept to me. I also used it on my playthrough teams a few times and it was an amazing Pokemon to have on my team, especially in the games with Eviolite like Alpha Sapphire.

I also love using it in PvP battles and have a lot of memories with it over the years in both singles and doubles. My first ever doubles/VGC team I ever made back in Gen 6 was built around a Trick Room support Dusclops. I also caught a shiny Dusclops in Friend Safari maybe 2 weeks after X and Y came out and I've been using it on and off ever since then as my Eviolite tank in online single battles even if the power creep makes it less and less viable with every new generation.

Honorable mentions: Grovyle/Sceptile, Torchic, Dustox, Sableye, Torkoal, Sharpedo, Spheal/Walrein, Metagross,...

I'm a huge fan of Torkoal and Aggron, personally.
I love turtles/tortoises in general, and the concept of a tortoise with a furnace for a shell I think is really cool. It also stands out for its impressive bulkiness among fire types, as most are much more offensively inclined.
Aggron is one of those pokemon that scratches the "monster design" itch super well, and the rock/steel typing lends itself to being an offensive powerhouse. There is also just a cool factor in using a dinosaur looking monster that eats steel.
