Well, these pokemon along with Glaceon had bit 10-15 minutes screentimes total in Sun Moon and B&W.
Only XY series didn't show all Eeveelutions, only Shauna mentioned about this when she discovered Serena caught Eevee.

Jolteon, the 2nd least used Eeveelution in the anime, after Leafeon... kinda sad considering it was easily the best till Gen 5 gave Espeon its hidden ability.
