I think that the last gym is Electric-type and in the London-like city. From what I can tell it’s Steel/Grass/Ground/Fairy/Water/Dragon/Ice/?. The Morelull forest looks too whimsical and fairytale-like to be Bug imo. The rose stadium could be the final gym, but if it’s in what’s presumed to be the League city, I think it’s more likely it’s a postgame facility. The huddled purple buildings on the northeast side of the map look like they could be a Ghost gym.
Because seven of them have the Gym symbol on their buildings, with the exception of the Dragon Tower building. Why are people assuming there have to be 8 gyms? There were only 4/5 trials in Alola.
My theory: those stadiums that you see scattered around the countryside are the only gyms. We know they are gyms, and they all look exactly the same — why would you think the other, very different-looking buildings are also gyms?
The typings look pretty obvious. You can trace a clear route between them (which suggests this game is probably going to be quite linear):
The last one could also be Poison or Psychic; the colour's a bit ambiguous. Fairy fits the 'glowing mushrooms' best though.
- Grass
- Water
- Dark (the gym is pretty clearly black — it's not ground or rock)
- Ground
- Fairy

I don't think that there will be a mixed type gym. We haven't had anything like that since Gen 2 (and the only reason why it did happen was because the gym leader was a rival from an old game and wouldn't make sense to be slapped with a type specialty).Honestly I think the last Pokemon Gym could be something like Blue's for the simple fact of just how no Pokemon type really fits the last building.

But Cheren in B2/W2 became a Normal-type Gym Leader despite being a rival and using a diverse team in Black/White.I don't think that there will be a mixed type gym. It was a case of early installment weirdness. But Cheren in B2/W2 became a Normal-type Gym Leader despite being a rival and using a diverse team in Black/White.

There were 7 trials in Alola, 8 in total.
1. Normal: Ilimia
2. Water: Lana
3a. Fire: Kiawe
3b. Grass: Mallow
4. Electric: Sophocles
5. Ghost: Acerola
6. Fairy: Mina
7. Dragon: no captain
In USUM you take on all 8 trials.
What's up with the 3a and 3b thing? The Fire and Grass Trials were two completely separate trials.
Actually, you had to go to Fire first, then Grass. In Sun and Moon, you had either one or the other as your third trial.
