For the job listings, one of them has the goal to catch trubbish. there's no telling which floor he's on. What exactly am I supposed to do for this job? Just walk through to the end of the dungeon, or actually try to find him?

It'll eventually just appear next to you when you reach a certain floor, as a normal outlaw would.

They will, however, try to flee to the stairs and if they reach it before you KO them, you'll fail the mission. That said, you should have a Pokemon with ranged attacks or one who can immobilize or slow them down if you're not strong enough to just wipe them out the first turn.
