Yessir, youre gonna have to catch it or use thief, but if you should use thief, make sure the pokemon using it doesnt hold an item

If you don't want to catch dozens of Paras just for the Mushrooms and you don't have the TM, there are Pokemon that learn the move Theif naturally, and also the move Covet, which does the same thing. There's an Attackdex on the main site you can use to see what Pokemon can learn these moves:

What about Covet? Snorlax learns it.

Just capture a bunch check which have mushrooms attached to them and release them, simple as that.
As if it's really that hard to get cash when we have Resort Gorgeous <.<
The simplest and quickest way is just to catch Paras in Mt. Moon with Ultra Balls -- it's almost a sure catch, there's no PP to worry about, and all you need is a Black Flute (traded, naturally) or something with Illuminate in your party to make them appear quicker. When you have a large amount of Paras (100 is a good amount if you use the Move Maniac a lot), just use an Escape Rope and go to the PC's "Move Items" command.

Catching Paras is very easy and inexpensive if you use the Safari Zone. Just go in there and catch Paras and nothing else, and soon you'll have a ton of mushrooms for only 500Pokedollars! Gee, I sound like a salesman. 
I personally think this is an easier way than taking the time to level up a Pokemon that natually learns Covet or Theif, but if you don't want to spend money, then do that.
