How do u calculate ur IV's? And also a question about EV leveling!

Ok how do u calculate ur IVs? also, if i want to start EV training, how do i level up? i know u have to kill certain pokemon for example zubat to get my speed up but then how will i ever gain exp or lvl if i only kill zubats? im so confused please help me someone ty
