I live in Ireland so if I watched it on my TV I'd be around 30 episodes behind the US, which is already 15 or so behind Japan. These are the only places I know of for watching it:

Toyko TV (Japan)
Cartoon Network (US)
Pokémon TV

I'm not entirely sure how I can go about tuning into the former two, and Pokémon TV is only good for random selections of reruns at a low resolution. Do any official streaming services carry it?

I know some people in the spoilers section use software called keyhole to livestream the episodes the moment they come out but I'm not sure how that works.

Yeah, KeyHole TV is legal, weirdly enough. Pretty sure you can find it easily if you look it up on search engines.
