You can't.

If you mean just plain old getting it, you need a legit event Shaymin, be it from the US TRU event, the JP Movie shaymin, or the Oak's Letter Shaymin (currently JP only).
Talk to the girl by the entracne to Floaroma town in Platinum with said Shaymin and you'll get the Gracedia flower. Use the item on your Shaymin during the morning/day and viola, Sky Shaymin

You can only obtain Sky forme Shaymin in Platinum.
You need an event land forme Shaymin to unlock the Gracidea Flower event which transforms land forme Shaymin into Sky forme Shaymin.
You can not catch Sky forme Shaymin.

You should've asked this in the Platinum help thread.

You can't catch Sky forme Shaymin in Platinum.You need to get the Gracidea Flower which is unlocked by obtaining a Shaymin.
