Yea, I was just about to say the same. As far as I can remember, you can't determine your Pokemon's nature until it has hatched. It can be quite annoying, you spend lots of time cycling around just to hatch a nature you didn't want. :(

some helpful info, if you have emerald, you can give an everstone to a ditto/female pokemon with the desired nature to give higher chances of having the same nature, or...... you can save BEFORE taking the egg from the daycare man and if it hatches with a wrong nature, reset and try again. if you do this after the egg you'll only get the same thing because the nature is set once you take the egg.

to add: The IVs, shining or not, are also set when you take the egg.
