Metagross was the first Poke I ever EV trained. I was in the same situtaion you are in. This is what I did to it, although, to be honest, I haven't taught it Explosion yet, because Psychic comes in handy while training.
Many people will tell you to EV train Metagross with speed instead of defense. It was my first time EV training, so I decided to do defense. Not a battle goes by where my opponent attacks first where I don't regret not doing speed training.
To EV train for Attack in Emerald, go to route 113 and defeat Spinda and Slugma, running from all Skarmorys. Or, go to the river on route 118 and EV train with Carvhana. I found a Feebas tile while doing so.
To EV train for Def in Emerald, to to the Team Magma base and defeat Geodude, Graveller and Torkoal.
To EV train for HP in Emerald, go to the Rustboro tunnel and defeat Whismur.
To EV train for speed, go to Altering Cave and defeat Zubat.
Yes, if Beldum is holding the Exp. Share and another Poke does the battle, Beldum gets an EV also.
