Nope, you have to just level up your eevee till it evolves.

If you DON'T use any of those items, and just keep the Eevee through the whole game, could you trade over an Eevee from another game and use the Sun/Moon Dust on them?

It evolves once Eevee reaches a certain stage. Then you will have no choice but to use so you can't use it to evole another eevee. You can't even get the sun/moon dust into another game.

IIRC, they don't evolve it instantly, but it will when its happiness is maxed out and then precedes to gain a level, and then only when you have the shard with you. IIRC, there is a guy in Gateon Port who will tell you your pokemon's happiness.

The Sun and Moon Shards do exactly what stones do for Eevee, I think.

it does NOT evolve immediatly.you MUST max its happiness.then once it gains a level,it should evolve.
