Most popular non-battleable characters??

Since the majority of Pokemon Characters are also trainers and we can battle at some point they are included as fan favorites (Most siginificant being Gym Leaders, Elite Four, Champions and Rivals) There are only few siginificant characters who we cannot battle against.
Who do you consider as most popular non-battleable characters within Pokemon games?

Which of those would you want to battle? What Teams can you see than with?

I think Lillie would be the most popular non-battleable character. Yes you can team up with her in the post game of USUM but you never actually get to battle her yourself even as a friendly battle. Her story arc is very interesting and similar to Bianca’s and her character design is rather pleasant to look at.

Apart from Lillie (at least in the original Sun/Moon), I could also see Sonia as a battleable character, or any of the PC admins (I don't know if Galar has one, as I haven't played Sword/Shield yet). I could see Cassius using a Poison-type team because of his punky looks, and Amanita could have Grass-types (because her name is also the name of a mushroom, even though mushrooms aren't really plants). Bill could have a Clefable because he turned himself into a Clefairy when the player first met him in all the games he appears in.

I just want there to be more to him than just the intro to Pokémon HOME.

Speaking of the Oaks, wouldn't it have been cool to battle Professor Samuel Oak himself? I know in the Red/Blue beta, they had planned a big battle with him after the player became Champion, but it was left out of the final product, unless you glitched the game out. They could've re-included it in Let's Go, but they missed a big opportunity there.

I was really shocked to learn we can fight Honey in IoA but cannot fight Sonia in main SwSh. Still hope we will be able to fight her in Crown Tundra.

Some other besides mentioned Oak and Lille would be Charon, Seven Sages (someone posted somewhere an idea of them having Color-based Teams which would match their names), Looker (could've had an Ash-Greninja in SM/USUM which would be his new partner since Croagunk seems to pass away), Wicke (A missed opportunity for an Alolan Ice-Type specialist) and Mohn (As a title defence battle post game).
Some other choices could be Mr. Brine, Kurt, Dj Mary, mentioned Pokemon Storage System Admins, Yancy, Curtis, Cara Liss.

Really the only people I would want to battle from the games who I couldn't were the Professors of each region, since they all have a major theme they could've based their teams on? I'll list a few examples below:

1) Professor Oak -

Oak's whole gig is to complete the original Kanto Pokedex, and seemingly was designed to be a final challenge for the player in the original Red/Blue games. Whilst that team could've worked here too, I decided to go with this one instead because it fit a bit better to me. Nidorino was described as his "ace" in Pokemon Masters I believe, and mirrors the rivalry with Agatha and the opening to the games (Nidorino vs. Gengar). I gave him the traditional F/W/G core with the starter you didn't pick and then the other two types, but I couldn't think of a Grass type he'd use (Vileplume maybe) so I figured I'd place Venusaur here and showcase Arcanine and Lapras a kind-of mix between Red and Blue's canonical teams. Aerodactyl and Snorlax are also a Red/Blue team mix, both are powerful Pokemon and I think Snorlax's presence in the region and the uniqueness of Aerodactyl means Oak would use them.

So according to Bulbapedia Elm is interested in Pokemon Abilities? I did not see that as a thing because they didn't exist in Gen 2 I don't think (they were Gen 3 right?). I assumed his focus was on Pokemon Eggs and breeding since he gives you the Togepi egg and an Everstone later on, so I went with that theme. And the theme is... Baby Pokemon that evolved? Togetic seemed like a given since he has a small connection to Togepi (maybe Mr Pokemon gave him another Togepi egg once you'd all figured out what it was). Raichu because Pichu is a Baby Pokemon and Pikachu is the mascot, Hitmontop is the only other new Pokemon (from the generation) which evolves from a Baby Pokemon and the last 3 gained Baby Pokemon pre-evolutions too. Wigglytuff and Clefable didn't make the cut because... I dunno, type overlap. Maybe replace Jynx with Wigglytuff, that could work.

3) Professor Rowan -

Rowan specialises in Pokemon evolution, so I slapped together a team which evolved in wacky ways, basically. Leafeon over Glaceon because Eterna City is closer than Snowpoint City and I think Grass suits him more. Gliscor over Weavile because Cyrus used the latter and whilst Bertha does use Gliscor in Platinum it's so minor I feel like it's acceptable for Rowan to use it instead. Magnezone also has a location-based evolution and it has more nostalgia than Probopass (as in, it's pre-evolution isn't from Gen 1), Mamoswine and Ambipom are Pokemon who evolve when they learn a new move and Wormadam evolves into different forms when in a different place (I picked Trash because he works in a town/city). Alternatives would've been Lickilicky or Tangrowth over Ambipom (with Glaceon over Leafeon if the latter is chosen) and Mothim and Vespiquen used over Magnezone and Mamoswine maybe?

Magnolia specialises in Dynamax, not Gigantamax, but I feel like her team would consist of Pokemon which can do so anyway! And yeah, I gave her Snorlax as well because... nothing else really fit. Alcremie maybe? I also went with Butterfree over Orbeetle because I just had a gut feeling it fit her better. Boltund cannot GMax but I like to think she has one and Sonia has a Yamper as a homage to it, but that's just me. Corviknight and Drednaw because they're found near her house and she has a Rookidee on her cane (I think?) - if not, replace Corviknight with something else. I figured she'd use the same starter Leon picked from your original trio (I'm #sobblesquad so she gets Rillaboom) and would potentially GMax it since Leon won't (you and Hop cover using the starter as a GMax ace) - realistically, I'd have her whole team GMax and it's randomly decided which one it'll be each battle.

Personally, I always thought Prof. Magnolia would have a Polteageist on her team since she seems like the type of lady who would enjoy her afternoons drinking tea. Plus, she has a tea set in her house

I do like it actually, I just left it out from her team since it lacks a Gigantamax form (a tragedy, honestly!) but since she focuses on Dynamax as a whole I guess planning a side team for her without worrying about the GMax requirement wouldn't hurt? I'd give her this instead:

I agree with your Polteageist idea and added Alcremie and Greedent for the food connection (you need cake with tea, and a greedy rodent seemed solid too since I know my grandparents at least spend a lot of time looking into their garden at the animals that appear there) and I slapped Orbeetle in there because the line needs someone other than the player character's fan to use it properly! Plus it seems as unfazed by things as Magnolia does.

I actually really like this team, but I think Butterfree might work better instead of Orbeetle since it can Gigantamax & it fits better with her team visually. Plus, it looks like the type of pokemon old ladies would love to have in their garden

What's the difference between Dynamax and Gigantamax?

Dynamax is the mechanic where for 3 turns, your Pokemon grows gigantic and its moves change to Max Moves based on types - these moves have between 140-150 base power I think. Non-offensive moves become Max Guard (an extra-strong Protect) whereas offensive Max Moves have different effects based on type - for example Max Geyser is the Water move and summons rain, Max Lightning is the Electric move and summons Electric Terrain, Max Darkness is the Dark move and it lowers special defense?

Gigantamax is the same mechanic except unique only to a few Pokemon - they change form alongside growing gigantic (so for example Charizard is basically entirely on fire with flaming wings, Pikachu becomes a chonky retro-Pikachu, Meowth becomes super tall) and are rarer in Sword and Shield (obtainable either as gifts or Max Raids, or alternatively as a reusable activity in the DLC). They still have Max Moves except for a particular type related to their STAB - Charizard no longer has Max Flare for a Fire move and instead has GMax Wildfire which is basically Fire Spin I think (minus the trap effect maybe?), and Machamp has GMax Chi Strike over Max Knuckle so rather than a +1 to Attack it gains a Focus Energy effect.

My point about Magnolia is that she is not focused on Gigantamax as a whole, which relates to the Pokemon changing form and gaining essentially a unique move for 3 turns. She focuses on the mechanic itself - why Pokemon are capable of it, why they grow gigantic and what Max Moves are and their effects. So when I planned her team I gave her a team which could GMax since it gave me restrictions and they were more unique than Dynamax (which every Pokemon except Eternatus, Zamazenta and Zacian can do). However it was pointed out that she'd probably suit a more generic team with Dynamax still as the feature, so I picked 6 Pokemon which I figured an old lady living at the end of a route would have.

What do you think would be Victor & Gloria’s canon teams if they were rivals in the game?

At the very least, I always felt that victor would have Grookey while Gloria could have either Sobble or Scorbunny, but I have no idea about their other pokémon. Maybe Gloria could have Eevee while Victor would have Pikachu since they’re both opposite Gigantamax forms

I always associate Sobble with Gloria for some reason. Maybe because of one of the official action figures that shows her with Sobble? Victor could have Scorbunny as a counter.

Specifically, G-Max Wildfire reduces 1/6 of all opposing Pokémon's total HP for the next four turns that aren't Fire-type. They can still switch out, but if the replacement Pokémon isn't Fire-type, it'll also lose 1/6 of its total HP at the end of each turn until four turns pass. I am not sure if Rapid Spin or Defog can remove the effects, but it's a Fire-type version of Gigantamax Venusaur's G-Max Vine Lash (which does the same but with Grass-types) and Gigantamax Blastoise's G-Max Cannonade (which does the same but with Water-types).

To my knowledge, this effect is unique to these three G-Max moves. I find them interesting because only G-Max Moves can have exclusive effects like these. All Max Moves have effects that can be replicated in other moves.

(For the record, G-Max Centiferno is the one with the Fire Spin effect, including preventing switching out).
