Well we don’t know what happen to Pikachu, so it seems like that Goh will be the last one standing against Zapdos just as it was stated in the special DD arc trailer.

I don't think Zapdos is getting caught. Honestly, if it doesn't, then I see it appearing later on when Go gets stronger, but that isn't something that should happen. Could just save an episode just having one of them catch it.

Would people find it disappointing if Raboot evolved in this episode, instead of in the middle of the darkest day episodes?

It won’t evolve here, there were pics that showed that it is still a Raboot when they visit the Slumbering Weald in the first episode of the arc. It’s going evolve during the arc.
