How do any of those things show that May has a personality? Saying "she interacts a lot with characters X Y Z" doesn't tell you anything about her.May had a ton of personality. For one thing she spent the first 15 episodes still deciding on what she wanted to do with her journey because at first she hated pokemon. She had an interesting relationship with Drew and the other co-ordinators and of course with her pokemon partners.
This poll here shows that May is a much more popular and well-liked character than Misty on this forum with 103 votes for her:

Well sure, smart writers reveal things about characters through their interactions with other characters. But merely stating that May had a finding-her-goal arc and that she has rivals isn't proof or even evidence that she has "tons of personality".
