Pansage is weaker defensively, but gets Leaf Storm. Pansear is the worst of them with the most limited movepool. Panpour is the best, but doesn't get a high powered 140 stab move.

I think the wise monkeys reference comes because of their gestures. Pansage has its mouth open. Pansear is holding its hand up to its ear and Panpour has its eyes closed.

My favorite is Panpour/Simipour. Just because I like that its based on a hippie. Plus its movepool gives it a few good options. Surf, scald, shadow claw, ice beam, rock slide and a few other moves. I have nothing against the other monkeys, I just really like Panpour/Simipour.

I don't like either of them much, but I prefer pansage, simply because I think simisage looks pretty cool.
