It will evolve into midnight. The only way to get Sun Lycanroc in Moon is trading the Lycanroc and vice versa.

I just noticed something. On the main page of Sun and Moon coverage, it says that if you start Sun during daytime, it'll be daytime and if you start Moon during daytime it'll be nighttime. However, I just started my Moon at 10:40 pm (Australia) and it's nighttime in Moon as well the opposite goes for Sun. So my hypothesis is that if you start the game at DAYTIME, it'll be daytime for Sun and nighttime for Moon. However, if it's nighttime when you start the game, real nighttime wil go for Moon and daytime for Sun.

Noticed something while watching a video, Mallow is battleable at the Battle Tree, are all Trial Captains and Kahunas battleable, if so, how diverse are their teams as Mallow only carried 1 grass type

I'm not sure, but Mallow, Lana and Kiawe are the only captains that challenge you in the Tree. Sophocles is a Pokémon League challenger, Ilima is challenged main-story, Mina as part of the UB post-game story, and Acerola is part of the Elite 4.
