Professors Pokemon

Depends what canon you go on. In game dialogue for Oak suggests that the Bulbasaur, Charmander and Squirtle he lets you choose from are actually his personal pokemon, and the only ones he has left anymore. However, unused data from the first generation games indicated that he at one point was going to be an opponent for the player, utilising Tauros, Gyarados, Exeggutor, Arcanine and whichever starter pokemon you and your rival did not choose (note that Gyarados, Exeggutor and Arcanine are pokemon you rival will utilise, depending on what his starter was)
However, if you go by the anime, he is confirmed to currently own a Dragonite and (I believe) a Pidgey. He also claims to have obtained a Seaking when he was travelling as a young trainer and is also shown to use a Charmeleon when seen at the age of 10 in the fourth pokemon movie (whether he still has either pokemon is unknown)
And in the Pokemon Adventures manga he is implied to own many pokemon, but seems to be a bit of a normal-type specialist, using Kangaskhan, Fearow, Dodrio, Pidgeot and Stantler.

As for Professor Elm, I don't really remember him having any particular pokemon in any specific medium, but since he is apparently the guy who first discovered Pichu, I would guess he owns one. Other than that, its hard to say. Probably the final forms of the Johto starters like Oak had. Also, the manga showed him owning a Sentret

With Birch, he has Treecko, Torchic and Mudkip on hand when you save him from the wild Poochyena - he didn't initially intend to give them to anyone and just asks you to use one in order to help him out. At a guess, I'd say they're his own pokemon, as with Oak.
The same can be said of Rowan - he is out and about with these specific pokemon, not actually looking to give them to trainers (in fact, in Diamond and Pearl you pretty much steal your starter and get permission to keep it later) Also, I believe the anime shows a Staraptor in his lab, presumably it belongs to him, but I don't think we see it again.

Juniper is different in that she actually intended to give you your starter (as evidenced by the fact that she sends them to you, Bianca and Cheren gift wrapped with a letter). We see her own a Cinccino (which she uses in the "How to catch a Pokemon" tutorial) and a Patrat (which she captures in the tutorial). Meanwhile the anime showed her owning an Accelgor

Sycamore is like Juniper, he has the Kalos and Kanto starters for the specific purpose of giving them out to trainers. However you do battle him later and he has a team consisting of Venusaur, Charizard and Blastoise. In the anime, many pokemon are seen at his research facility, including the Garchomp that I'm pretty certain his his.

And then we have Kukui, who is seen to possess a number of pokemon, most notable Rockruff which lives in his lab, he used to demonstrate catching pokemon and how to use Z moves, uses in the Battle Royal demo and has it practice moves on him. The opening video of him shows a Pikipek and Cutiefly and in his home he has Stuffal, Snubbull, Corsola, Poliwhirl and two Lovedisc.
And, of course, there is also his team that he uses during your champion battle - Lycanroc, Snorlax, Magnezone, Alolan Ninetales, Braviary and whichever starter you and Hau left behind.)

So personally I'd like to see each Professor with these teams:

Oak
Venusaur, Charizard, Blastoise, Tauros, Dragonite, Kangaskhan

Elm
Meganium, Typhlosion, Feraligatr, Pichu, Furret, Raichu

Birch
Sceptile, Blaziken, Swampert, Mightyena, Aggron, Salamence

Rowan
Torterra, Infernape, Empoleon, Staraptor, PorygonZ, Rotom

Juniper
Serperior, Emboar, Samurott, Minccino, Accelgor, Klinklang

Sycamore
Chesnaught, Delphox, Greninja, Garchomp, Tyranitar, Gallade

Kukui
In game team

Obviously, I like the idea of each Professor having the fully evolved forms of the starters that they each give out. Raichu for Elm, because he had to breed that Pichu he discovered from somewhere. Rowan I feel would find Rotom and Porygon Z useful for research, Klinklang is a pokemon Juniper would eld up with after her research in Chargestone Cave, and Tyranitar and Gallade are two other pokemon to help Sycamore in his research into Mega Evolution. As for Birch, maybe he befriends the Poochyena that chased him and eventually captures it. Aggron and Salamence are simply powerful pokemon he found during his research.
