If I bring my Espeon from Pokemon XD into Pokemon Emerald and breed it with a Ditto and get an Eevee, will Eevee be able to evolve into its respective forms with water, fire, and thunder stones? Also, if I want to get an Umbreon, since there is no day/night in Emerald, how would I go about trying to evolve the Eevee? Thanks.

First question, yes. Don't know why you'd think it wouldn't be able to evolve. 
Second question, there IS day/night in R/S/E, and it is determined by the clock in your room that you set at the beginning of the game. It just doesn't "change" in a way that you can see it, as it did in G/S/C. More info from my Emerald FAQ thread:

So there you go. Just level it up at max happiness and it'll evolve into the respective form depending on what time it is.

A: Unlike in G/S/C, where day/night was 6 to 6, this game’s day/night is 12 to 12.
So:
Umbreon = 12 midnight to 12 noon
Espeon = 12 noon to 12 midnight
Don't ask me why Nintendo did it that way, I don't know.
So there you go. Just level it up at max happiness and it'll evolve into the respective form depending on what time it is.
