Question on EV's

If, for example, i had a Blaziken, and that blaziken had reached its overall EV maximum (510) does that mean that carbos, protien etc... would have no effect on speed, attack etc...????

Yes. Once a pokemon has reached its limit on EVs it will no longer eat anymore vitamins. If it's still taking them, then it's not maxed out.

So then does that also mean that when they lvl up, their stats, like HP, Attack etc... wont increase?

Let me give you an example:

I maxed out my Cacturne's Special Attack early as a Cacnea. I had her S.Att maxed out by level 20, but her special attack didn't start shooting up by +8 or +9 after every level-up until she reached around level 35-40. That's when I started to see her S.Att really increasing by a lot. They do this on purpose so you can't make your pokemon super powerful early on in the game. Whatever stat you put EV's into usually won't start increasing noticeably until they start approaching higher levels. Did that help?

Yup, that's why people consider to EV train their pokemon as early as possible, less EXP as possible. That may takes a long time, and boring, but you'll see the results.
