I realized that I need a replacement(to change team when fighting same guy 2 times)

I have a good idea on this one pokemon,which its Rhyperior

EV's 252 atk/252 sp defense?

how would that go,just a lasty Physical attaker, I also considered using a careful or Adamant nature,is it worth just starting over for a new nature? or will Jolly surfice?

you could try a rock polish rhyperior
