there is no sure fire way. the odds are the same for catching a shiny zubat as it is for any other pokemon. I got mine randomly, there is no trick.

Look anywhere where zubat/golbat appear, like in caves. Wait until you see a shiny one appears. The time it takes depends on how lucky you are. Look for them to be a dark green, if you wanna go after one. Your question would be answered better in the shiny sticky.
