Simple question on EVs

I know this will get locked very soon, but I need to know something.
I trained my LV40 Alakazam to LV41 by battling only Ghastly. This raises it's SP.ATK stat, such as the sticky said. Now, since it's a special sweeper, should I train it on Diglett to LV42? I'm confused on how to determine if you have maxed out your EVs. I know I can have 510, but after I get 252 SP.ATK, can I get 252 Speed? After I get 252 SP.ATK, can I have any more?

Yes, after you get 252 Spatk and 252 spd, that equals 504, so you could get six more on something else, but really only 4 more to get 1 stat point. On each stat you can only have at most 255 I think. But on ALL the stats you can have 510 total. So if you want to get 2 stats maxed out with EVs, give them 254 each. And to tell whether you have maxed Evs or not, you have to have R/S/E and talk to the lady next to the energy guru. if she gives your lead pokemon an effort ribbon, that means that it has maxed EVs.

Yes, you can get both then you need 6 more which you should use on HP
