Snorlax movesets

Of the 2 sets based on what I see mentioned in the smogon site, I am trying to determine which moveset would be better for whenever I get to face anabel's latios & snorlax for the gold symbol in battle tower:

1. curselax
careful nature, EV: 252 hp/sp.def, 6 defense
- curse
- rest
- return
- shadow ball

2. sub-puncher
adamant nature, EV: 252 attack/sp.def, 6 defense
- substitute
- focus punch
- return
- shadow ball

max sp.def for switching into latios or would its sp.def be enough to minimize damage anyways?
