So how do you get EVs when battling?

Does a Pokemon get it if it defeats another pokemon, or does it have to participate in a battle, basicly hiting a pokemon then another one of your pokemon finish it off and both gain the EV, or does it just have to see the pokemon, by facing it and then run away, or does all 6 pokemon get the EV regardless, I'm confused about this, could someone explain?

Any Pokemon that gains EXP from the battle gains full EVs.

For example, Zubat gives 1 Speed EV. If you start out the battle with Pichu, then switch to Pikachu and have Pikachu faint Zubat, both Pichu and Pikachu will gain 1 Speed EV each.

Also Pokemon that hold the EXP Share gain full EVs, since they're also gaining EXP.
