So what exactly was the purpose of Goh getting a Dynamax Band?

Waste indeed... but very much game accurate. Melmetal cannot legally use Z-Moves being only accessible in Pokémon Go, Let's Go Pikachu/Eevee and Sword and Shield.
Neither Lance nor Cynthia ever used Dynamax in games and Anime writers did not have a problem with it...
But yeah, it is what it is.

Probably was a one off, but given in case they had better planning. Not gonna fault the lack of staff, but that shouldn't really have hurt the grand scheme of Journeys story.

While your right that neither of them have access to Dynamax, not being included in Sword and Shield, the Pokémon they Dynamaxed are capable of doing so. It's loose, but likely something Lance or Cynthia would have probably done in-game if available.

The anime likes to introduce this things just for them to not get used, huh? We're still waiting on Brock using his heavy ball and Ash and Misty to use their level balls for over 20 years.

So he could catch Eternatus. That's it. The Dynamax Band was just so he could throw a Dynamax Ball.
So... it was completely pointless then? Because I just rewatched that scene and Goh's wrist is bare. It's not an error, either. He doesn't have it on before or after that scene.

As many have said, it was probably something they did to set up him using it later but had to ditch it either duo time constraints or they didn't get a good script to go with the premise.

Might be an oversight as well
