Jolteon serves as the lead and if I predict an earthquake coming, I can just switch out to Aerodactyl or volt switch to him if possible. Starmie is here to take some hits better than the other two, and to clean up weakened teams. I'm thinking about getting a Starmie with Hidden Power Fire as Ferrothorn gives my team a major headache. This team's current record is 24 wins in a row. The only restriction here, is that Jolteon must remain on the team.

Wouldn't Jolteon be better off with HP Ice for BoltBeam coverage?

Although I guess your Starmie has it. But maybe consider Recover on Starmie over Psy Shock. I know Psy Shock covers fighting but recover may just give it a bit more bulk

Hidden power grass is so Swampert and Gastrodon don't wall my team. If Starmie learns recover, should the EV's be more pointed towards bulk instead of speed and power?

Fair enough but Starmie can also learn Grass Knot. So HP Ice on Jolteon still might be a better option

Well the thing is that apparently the opponents use pokemon that counter your own, but this is based on the actual pokemon, not moves. They all lead with swampert, quagsire, or gastrodon, and since I'm using Jolteon as the lead, it would be better for him to know HP grass.
