Will the guy teach only one of your pokemon substitute, or can you get more? (Same with explosion)

Quite simply, No, you can only get it once, if you look, when you click yes, it says,

'This move can only be learnt once, is that OK?'

So, only once

Yeah, substitute/explosion, and ALL Move Tutor moves in Fire Red and Leaf Green can be taught only once, so choose which pokemon you wish to teach the moves to carefully.

Though if you have both versions of the game, you can trade and teach a move to a pokemon if you've already used the move, or if you have emerald, you can get substitute and explosion there too, as well as a few other move tutor moves at the Battle Frontier.
