How come most E4 trainers have Dragon, Ghost and Ice pokemon? There must be other types to use now!

Actually, they also have Fighting, Poison, Psychic, Dark, and Steel, not just Ghost, Dragin and Ice.

These are the only types that an Elite 4 member hasn't specialised in (poison isn't on there because Agatha also trains poison, same with Water and Lorelei):

Fire
Grass
Rock (Bruno is Ground and Fighting)
Electric
Normal

So really, they still have extra options. Most of the types left out are pretty common, while the elite four tend to go for rarer types (ice, ghost and dragon).

Each Elite 4 trainer specialises in a certain type except the champion, who I feel has a very well balanced team. And what do you mean by there should be more types to use by now? Only two new types have been added snice the beginning and that was ni the second generation, so they're not exactly a recent development.
In RBY the Elite 4 had ice, fighting, ghost and dragon as their specialist types, however they also had some water, psychic, rock, ground, poison, flying. On top of these different types the champion has, normal, grass and fire. That's a total of 13 types.
In GSC the Elite 4 had psychic, poison, fighting and dark as their specialist types, other types they used were flying, water, ice, bug, steel, rock, ground, grass, poison, ghost and fire. The champion has dragon on top of this. That's a toal of 16 types.
RSE Elite 4 has dark, ghost, ice and dragon. Other types used are grass, water, flying and ground. Emerald champion has on top of this, poison. RS champion has, steel, psychic, rock and bug. That's a total of 13 types.
FRLG elite 4 and champion has types that are different to the first time round, steel, bug and dark. That's 3 new types.
Overall that's 21 fights and 16 types. The only type not used in elite 4 or champion battles so far is electric, which is used by Red in Mt. Silver on GSC. Therefore, you are soundly proven wrong.

Lance uses more Flying then Dragon. In G/S/C all his Pokemon are Flying.

Lorarei uses the same amount Water Pokemon as Ice Pokemon.

All of Agatha's Pokemon are Poison, not all are Ghost.

There are not two Elite Four members who have all Pokemon of the same type.

I have also made a list of the Pokemon types and how many E4 Pokemon have them from R/B/Y, G/S/C, R/S:
Poison: 11
Water: 10
Ice: 10
Ghost: 9
Flying: 9
Dark: 9
Dragon: 8
Psychic: 7
Fighting: 7
Rock: 4
Grass: 4
Ground: 3
Bug: 3
Steel: 1
Fire: 1

So surprisingly, Poison is the most used E4 type. If you want to complain about any type used most by the E4, complain about Agatha and Koga and them using Poison.

The Elites use pokemon types that you are less likely to have encountered in large numbers. For example:

RBY - Ice, Fighting, Ghost, Dragon

The most Ice types you'll have found in the wild would be the rare wild dewgong. No others. Fighting are only really sen in posession of Hikers or the one small 'Gym' in Saffron. Admittedly, Fighting paled comapred to psychic in these games, but still. Ghost, a bunch of low leveled Gastly and the occassional Haunter. Dragon, uh none. Unless you intend to catch a Dratini, you've likely had no experience fighting them. Not to mention Lance loves Hyper Beam, and his Dragonite has Barrier.

Exactly.

That's another reason they're tough, cuz they have uncommon pokemon with few weaknesses that you are unlikely to have prepared your team to face.
