For FireRed and LeafGreen, Gary is always Gary. I couldn't think of calling him anything else.

For HeartGold and SoulSilver, I call the rival Baron. I called him that when I played Crystal, and the name stuck. It just seems to fit him.

I tend to use the rivals' original names, though in Pokémon Gold, Silver, Crystal, HeartGold and SoulSilver, I often named him "???".

I don't name mine "******" or "****" nor default or anime names. In my younger years I usually named them names of my friends, like my real life "rivals". Nowadays you're not allowed to name them often :/
