What eeveeloution should I get?

When all my guys are fully evolved my team would be:

Infernape
Garchomp
Staraptor
Lucario
Bibarel (HM slave)
?

I was thinking of Espeon and Jolteon but can't really pick which one, Vaporeon also popped into my mind for a water type

You have two Pokémon that are weak to ground on your team already and nothing that would have a super-effective move against them, so might I suggest Vaporeon, Leafeon or Glaceon? Leafeon would cover the fact that you currently have no counter for Water types, and Glaceon would similarly cover your lack of counter for Flying-types (which is worth considering, as both are extremely common types in-game).

So, I would suggest either Leafeon or Glaceon, though Vaporeon remains an option.

I'd go with Leafeon. You're going to have some problems with Bertha of the Elite Four otherwise (she's a ground-type specialist, and she has a Quagsire that is only weak to grass-type moves).

As for what he said ^^^
Bertha is weak to water for the most part, plus flint and also, there will not be anyone that resists water besides a few of cynthia's pokemon.

I would go with Vapereon.

I say that because of ES's reason, you kill two birds with one stone, Flint AND Bertha (Mainly).

I didn't really like Leafeon, although I may not have been using an effective moveset. Vaporeon can act as a total wall, and if you teach it a move or two that'll hold some weight against water types, it can be a real pain with its Water Absorb ability.

One of my favorite setups for Vaporeon is the rain+rest setup. Because of its Hydration hidden ability, it works pretty well (especially in double battles with something else that works well in rain.) Not to mention with left overs, which works great on Vaporeon.
