Modest I'm assuming is the best.Timid can be decent?

anything that doesn't lower their Spc. Atk, or Defenses.

Modest or Timid. Alas, my pair of Latias' are Bashful and Careful while my Latios is Serious. x.x

You'll probably want to boost Latios's Special Attack, seeing as A: that's his strongest stat, and B: the strategy involving him seems to call for a lot of firepower in that department. Go with a Modest nature and see what happens. Use Recover if you need to after boosting Latios's bite with Calm Mind. Timid is a recommended nature to try as well, considering the fact that Latios has an abundance of S Attack (especially with Soul Dew equipped) but not quite as much Speed.

For Latias, go with Modest either way. See above, even if her best stat isn't S Attack. In fact, given the standard movesets and strategies, you'll probably want that boost anyway.

I would say modest or timid for latios, and modest for latias. BTW, the soul dew raises latios' sp.def by 50%, and increases latias' sp.atk by 50%

I got mine at Mild for Latios. So it decreased at its WORST stat. But it works beautifly for Special Sweepers.

Modest is the best, IMO.
It raises their most important stat, afterall. (At least I think sp.attack is their most used stat)
My Latias on emerald had a modest nature, yay. ^_^
But my Latios and other Latias are both bashful...

Calm isn't a bad nature either, though it would be better on Latias, since she has the higher sp.defense, and is better suited for the role of a special wall/tank/sponge/whatever.

Then timid's okay if you want a more speed based Lati@s, rather than a special sweeping pokemon.

Yeah, pretty much answered now. Getting the nature you want it really hard since it's preset once you start the game. :p (Unless you get it from the Southern Island)
