Yes the sprite will be shiny. For example, if you have a shiny charizard following you then you will see a black charizard following you instead of a normal colored charizard.

For legendaries, I'll just send em over and switch around between Arceus, Jirachi, Shaymin, Latios <3, and Giratina

I would love to know what Zangoose looks like as an actual sprite.

You mean like when you look at the party or at the PC and those small little mini pokemon images? Those are still normal. No Shininess

Also to anyone who wants to know how a pokemon looks in overworld, it shows both normal overworld and the Shiny overworld.
