I just beat Paper Mario again, so I'll go with those.

Hardest: Crystal King. If he couldn't heal himself, then it would be a lot easier.
Coolest: Jr. Troopa by far.
Easiest: Koopa Bros. Power Bounce is win.

Also, on a side note, Water Wraith is scary. O_O

Hardest: Lance from Pkmn Yellow (Given I was around five at the time, but not even my Lv.80 Pikachu could get by his final Dragonite. T_T)

Coolest: Meta Knight battle of Kirby: Nightmare in Dreamland. (I remember how much I loved this fight, I would replay the game over and over just to get to him.)

Easiest: Final battle of Kirby Squeak Squad. ('Nuff said.)

Hardest: Probably the Princess Shroob battle set in ML:piT. I didn't have very many Bros items to begin with, and the final form, where you can't do damage until beating the limbs, is ridiculously hard without them.

Coolest: Tabuu from SSBB was pretty neat. Galaxy's Bowser battles were pretty fun because of the music.

Easiest: I don't know, there were quite a lot of easy battles early on in most games. Counting only final bosses, probably Marluxia Form 2 in KH:CoM. It took a while to beat his mech, but it was still ridiculously easy because of how slow his attacks were.

Hardest: Mogenar from Metroid Prime 3 & Metroid Prime's first form from Metroid Prime.
And before I thought to use Morph Ball, Flaahgra in Metroid Prime >_>

Coolest: Bouldergeist, Tarantox, King Kaliente and Megaleg from Galaxy. That game had some cool bosses.
Also the entire Ganondorf battle, excluding the horseback part, and Usurper King Zant from Twilight Princess.

Easiest: Tie between the final Bowser in Galaxy and Dark Samus/Aurora Unit 313 in Metroid Prime 3, dissapointingly.

Hardest boss battle: Erm... I would like to say Waterwraith. I know he's pathetic once you get to the boss battle, but he just steamrolls my pikmin every time I go into the submerged castle...
Otherwise, Tubba Blubba without his heart. Fighting him like that is insane.

Coolest boss battle: Of off the top of my head, 02. Who knew a kirby boss could be so epic? Too bad he was so easy...

Easiest boss battle: ... There are so many... Well, all Bowser boss battles in 3D mario games where you collect stars. Just beat the first one, you've beat them all. Though there are so many easy boss battles...
