You already have the answerI know the answer is because whittling the Pokemon down adds more difficulty (in a pleasant way) than just knocking them out.
Knocking them out is easier than letting them with low HP

I mean in all honesty this and the shiny sound should be in all future main series games but knowing how Gamefreak is they probably intend to keep it unique to the legends games, although I hope I’m wrong.I mean in Legends Z-A you can now catch fainted Pokemon, or at least after knocking them out you get a few seconds to catch them after defeating them.
There's even a risk-reward factor there. Defeating it may give the technical best odds, but it doesn't guarantee it, particularly for Pokemon with low catch rates.I mean in Legends Z-A you can now catch fainted Pokemon, or at least after knocking them out you get a few seconds to catch them after defeating them.
I am pretty sure that would be only Legends thing along with you know, semi turn based thing introduced in PLA and PLZA (or real time battling with some turn based mechs) while in main generational games like SH/SW and SV, it will remain turn based, more strategic. So people who love turn based mechs it will be generational games and people who love fast paced ones.. Legends games. Perfect balance.I mean in all honesty this and the shiny sound should be in all future main series games but knowing how Gamefreak is they probably intend to keep it unique to the legends games, although I hope I’m wrong.
