Would the Pokémon anime still be sucessful if Ash had been replaced after Kanto?

Like right after Kanto? Yeah sure because most kids would've been more used to that idea especially because of Digimon ditching its main characters every 60 episodes. So Pokemon doing the same thing at the time wouldn't have surprised anyone.

It being a trend to do at the time however doesn’t mean it would’ve been a good decision.

Ash as he is today stands out far more as a protagonist by deciding to keep him for this long, and as others said, ditching main characters as fast as you put them in runs the risk of the audience not clicking with a character who’s only around for a limited time.
