Sonic the Hedgehog + Knuckles -
Pretty much the cream of the crop as far as I'm concerned. Even after all these years, I still manage to find myself coming back for more. The fun factor is just THAT high, and the lush levels make for some great exploration with the likes of Knuckles and Tails.

Sonic Adventure -
I never had any issues with the camera, so I didn't have problems playing the game at all. Despite a few awkward sections here and there, it's still a throughly enjoyable adventure. Apart from Big the Cat's poor excuse for gameplay, I actually liked every character's form of gameplay. From Amy's adrenalin rush of a cat & mouse chase, to Sonic's classic speed stunts.
Plus, lo and behold, it actuallity managed to retain the charm that past games of the franchise held, whilst waeving in an interesting story and resolving past questions. Yey~

Tails' Adventures -
Granted, it's not really a proper 'Sonic the Hedgehog' game. But it's still one of the most enjoyable quests that have emerged from the franchise, despite the fact that it deviates greatly from the format that is most associated with the series. There's both that and the fact that the Imperial Cucco Army made for some kickass enemies.

Sonic CD -
It's easier than pie, but the Time Travel mechanic rocked. Especially if you're going for both Eggman's seemingly pointless machines in the past AND the time stones. That made the game a lot more playable. The entire Stardust Speedway Zone, including the race against Metal Sonic, made for an instant classic too.
And hey, it introduced Amy Rose! Nothing better than introducing the obligatory skirt!

And of course, because I'm a lazy jerk, I'll just list the rest;

Gravy, you played Wakuwaku Sonic Patrol Car? And an authentic one, I take it (as it stands, people are having lots of trouble emulating Sonic Arcade)? That's friggin' incredible.

Anyway, Sonic 3 & Knuckles, definitely. You could play through every level of Sonic 3 and Sonic & Knuckles with Sonic, Tails, and Knuckles (the three greatest characters worth playing as ^^). A save feature (which was sorely needed back in the day), and some friggin sweet extras in the form of both the Super and Hyper forms. Tails and his fun exploration abilities alone are enough to keep me coming back (hell, on my original Genesis cart, I got 99 lives with the guy). My only complaint is the music... it was hardly bad, but I felt it paled in comparison to its predecessors, Sonic 2 and Sonic 3 (by itself). Now, if they used the Sonic 2 Super music, the Sonic 3 opening, Sonic 3 ending credits to a lesser extent (as for the mini-bosses and Knuckles, I could go either way on their themes), and maybe the Sonic 2 final boss theme, it would've been absolutely perfect. Also, Lava Reef Act 1 owns Act 2's soul (which is odd, usually the Act 2 themes seem better, like some kind of reward for getting through Act 1 considering there are no between-Act saves).

Tails' Adventure would probably be my second pick. I mean, its Tails, starring in his own game. More of that fun exploration, and it was probably the best example of integrating Tails's mechanical genius while not sacrificing his focus on flight abilities (like Adventure 2). Also, similar to S3&K's save system, this game sported a password system. Probably not so hot nowadays, but back then, it was the best alternative when we had no save.

Runner-ups would be Sonic 2, Sonic 3 as a stand-alone, Sonic Adventure DX (the best action Tails got in 3D land ^^. The Adventure Fields were fun to goof around in too, though it was a pain getting lost in some of them. Thank god DX featured a map. Plus, the Game Gear games were so worth the emblems). Also, in spite of its flaws, I actually like Sonic Adventure 2 Battle. The treasure hunting stages sucked, as well as Tails being crammed into a friggin mech (though, I can't complain about Eggman being suited towards that play style), however, the speed stages still seemed pretty fun. Plus, unlike most games, the emblems actually seemed worth getting. Green Hill Zone, Chao Garden extras, various other unlockables, it's all leagues above the crap we've gotten lately. Super Hard Mode? Bulls***! Yeah, that'd be sooo worth it after you already played through the game and grew skilled enough to obtain insane scores in order to obtain A ranks, thus putting anything in a harder mode to shame. [cough] And minus the ridiculous amounts of time you have to wait for them to develop, I actually like the Chao Gardens, for that matter. With Chao Kindergarten, Chao Karate, the option to use Chaos Drives to raise stats instead of animals that could add some unneeded deformities, branching to three different allignments based on what characters raise them, I'd say Adventure 2 has the original beat in that regard. The storyline wasn't too bad, neither (though, it would have been so much better and a lot more meaningful if SHADOW STAYED DEAD).

Now, I haven't played Gems Collection yet, so unfortunately, I have yet to try out Sonic CD and can't make a judgement. This goes for several other games, too. Sonic Battle, Sonic Riders, Sonic Advanced 3 (some say it's gimmicky, others seem to like it), Sonic Rush, etc., so do understand if they're not on my list.

For me, it is probably a tie between Sonic 3 and Knuckles, and Sonic Adventure 2 Battle. S3 and K is, quite simply, a classic in terms of graphics, characters, and extras/features. The gameplay was incredible, and the three playable characters were neither too similar nor too different. As Yamato-san pointed out, the save feature was badly needed at the time, and the addition of Hyper Forms for Sonic and Knuckles was great. Although, I'll also agree that the music left a lot to be desired, but was by no means bad. I just think that the music in Sonic the Hedgehog 1 and 2 was vastly superior to that of Sonic 3 and Knuckles. I also think the bosses were unique; not too difficult, but not at all easy. In addition, it had a great finale which perfectly wrapped up the Death Egg Saga started in Sonic the Hedgehog 2. There's nothing more to say about this one, other than it is a fantastic game with few very few flaws.

Sonic Adventure 2 Battle, however, I found to be just as enjoyable. While I, too, found some flaws, they were minor in my considered opinion. The Treasure Hunting levels can get tedious at times, and are basically the last thing I would expect from a Sonic Game, but all-in-all it was nice to break away from the norm once in a while (although I do feel they should've included LESS treasure hunting and more speed...and that we could've done without Aquatic Mine). And as for sticking Tails in a mech...yes, that's pretty much the worst idea they've had up to that point. Though playing as Eggman for a change was very unique. Also, Sonic Adventure 2 Battle probably has the deepest and most interesting storyline of any Sonic game up to this point. It was incredible seeing Shadow's character develop and change from villain to hero, at the very end making the ultimate sacrifice to save the planet he'd at one point wanted to destroy. Speaking of which, Sonic Adventure 2's finale is my personal favorite out of all Sonic games to this date. It was dramatic and somewhat sad, though added the perfect amount of closure to the game's plot...which leads me to this: I agree 100% Yamato-san, Shadow should have stayed dead. His revival made this game's ending seem so much less meaningful.

And that's basically it. Some notable mentions which didn't quite make it onto the list are: Sonic Rush, Sonic CD, and Sonic the Hedgehog 1/2.

Wha-? Oh, no, no, no, I was only joking around I'm afraid. Appologies if I got your hopes up there Yamato XD;

Though if it's worth anything, I HAVE managed to play Sonic Arcade. Not the emulated version mind, the authentic roller-ball action, arcade machine version. Same for Sonic the Fighters. Though seeing as that's now a part of Gems Collection, I suppose it's not really worth mentioning :p

For more detail...Sonic 1 and 2 for old-school, Sonic 3 for old-school, a save feature(yay!), and managing to keep me going at that SWIRHYIRSDHY CARNIVAL NIGHTS ZONE ten million times while continually wondering if I should just give up on most of the pretty objects and just run through it so that I stop timing out, and Sonic Adventure for being HIP and MODERN and having CHAO and making Tails EXTRA adorable and for having cool music and aside from a few blagh moments such as that one point in Emerald Coast that I hit at the right angle and fall off the course for NO REASON.

Honorable mention:
Mean Bean Machine. Adddicting @_@ ...I still have my original Genesis cartridge of it, too XD(along with Sonic 1 and 2)

Surprising I didn't mind it too much-es:
Spinball. I'm serious. It's hard, but it's fun. Somehow.
3D Blast. It's no gem, but it's tolerable.

And for the record, I have yet to play any of the new school Sonic games other than Adventure. D:

Yes, I'd have to say those, the games that got me into Sonic, are my favorites. (Technically, I should be saying the gamecube remakes, since that's what I played, but you get the point.) A bit on the short side, but I still really enjoyed them. They're somewhat challenging, but not impossibly hard. Sure, there were the stupid parts *coughbigcough* but there was more good than bad. They're still pretty fun after you beat them, especially 2, and the Chao raising is just fun. They have interesting plots that keep you playing just so you can see what happens next. The games were IMO really enjoyable and fun.

I don't really have much experiance with old-school Sonic, so don't go yelling at me about how those were so much better than the newer ones. From what I've seen via Mega Collection, though, they ARE fun. But I just don't get hooked on them like I did the others. But if you're talking old games, I'd say Sonic 3. Yay for being able to save!

Um... yeah, I like Big, just hate his gameplay. I wonder why no one said heroes... oh yeah, controls are loose and story is sleepy.

Sonic Chaos. Back during the old days, I was one of those unlucky people who had only a SNES. I DID have a Game Gear, though, so that was my only way of playing sonic games besides leeching off of my friends. Sonic 2 for Game Gear was freaking annoying, but I loved Sonic Chaos since it was easier and you could actually play as Tails rather than watch him get captured for no reason.

Second would be Sonic 2 for the genesis, seeing as it was the one console game I got to play for any lenght of time thanks to friends. (Except for Spinball.... but I dislike Spinball. Even more than 3D Blast.)
